Makes 12 bars

60 ml (¼ cup) butter
60 ml (¼ cup) peanut butter
30 ml (2 tbsp) soft brown sugar
1 egg, beaten
500 ml (2 cups) of regular, uncooked oats
5 ml (1 tsp) ground cinnamon
5 ml (1 tsp) ground mixed spice
30 g chopped good quality dark chocolate
250 ml (1 cup) JAZZ™ apple cubes (about 1-2 apples)

  1. Preheat oven to 180 °C and line a small (20 x 15 cm) baking tray with baking paper.
  2. Slowly melt the butter in a small pot or in the microwave. Stir in peanut butter until runny. Add sugar and stir through.
  3. Pour the butter mixture into a bowl and stir in the egg. Stir in oats, spices, and chocolate.
  4. Add apple cubes and gently mix until combined.
  5. Spoon the oat mixture into the baking tray and flatten. Bake for 20 minutes or until golden brown and cooked.
  6. Remove from the oven and cut into bars while still warm. Place on a cooling rack and allow to cool completely. Pack in as a work or school lunchbox treat. Store in an airtight container for up to 3 days.
