6-8 wholewheat or multi-grain tortillas, small or medium-sized
125 g blue cheese, crumbled
150 g white cheddar cheese, coarsely grated
150 g mozzarella cheese, coarsely grated
2 JAZZ™ apples in the skin, cored, halved and thinly sliced
1 spring onion, sliced

1. Place 3-4 tortillas on a wooden board and divide blue, cheddar and mozzarella cheese between the tortillas.
2. Divide apple slices between tortillas and place on the layer of cheese.
3. Sprinkle with spring onion and top each with another tortilla.
4. Pan-fry each tortilla over medium heat, in a dry pan on both sides for a few minutes, until the cheese has just melted and the tortilla is crispy and golden brown in colour.
5. Slice with a pizza cutter or knife and serve immediately.

1. You can use any combination of cheese according to your preference.
2. Substitute spring onion with caramelised onions as these are delicious with both apple and cheese.
