Makes 12 bars
60 ml (¼ cup) butter
60 ml (¼ cup) peanut butter
30 ml (2 tbsp) soft brown sugar
1 egg, beaten
500 ml (2 cups) of regular, uncooked oats
5 ml (1 tsp) ground cinnamon
5 ml (1 tsp) ground mixed spice
30 g chopped good quality dark chocolate
250 ml (1 cup) JAZZ™ apple cubes (about 1-2 apples)
- Preheat oven to 180 °C and line a small (20 x 15 cm) baking tray with baking paper.
- Slowly melt the butter in a small pot or in the microwave. Stir in peanut butter until runny. Add sugar and stir through.
- Pour the butter mixture into a bowl and stir in the egg. Stir in oats, spices, and chocolate.
- Add apple cubes and gently mix until combined.
- Spoon the oat mixture into the baking tray and flatten. Bake for 20 minutes or until golden brown and cooked.
- Remove from the oven and cut into bars while still warm. Place on a cooling rack and allow to cool completely. Pack in as a work or school lunchbox treat. Store in an airtight container for up to 3 days.
