Breakfast is the most important meal of the day and it might have just become the tastiest now with our recipe for JAZZ™ Apple, Peanut Butter & Raisin Granola. This is one of those recipes that once you have tried you will continue to go back to as it’s great to tailor to your own tastes and can be made in advance to avoid stress in the morning. Ingredients

3 cups rolled oats
1 cup roasted peanuts
1 tsp kosher salt
2 tsp ground cinnamon
1 large JAZZ™ Apple, diced (skin on)
½ cup peanut butter
1/3 cup melted coconut oil
1 tbsp vanilla extract
1/3 cup maple syrup
¼ cup brown sugar
1 cup raisins

Method

  • Preheat oven to 165 degrees C.
  • In a small sauce pot, combine melted coconut oil, peanut butter, and maple syrup.  Warm and whisk together until well combined.
  • In a large mixing bowl, combine all ingredients except for oats and raisins, stir to combine.
  • Fold in the oats and continue to stir until well coated.
  • Spread mixture evenly onto 2 baking pans lined with parchment paper.
  • Bake for approximately 50-60 minutes or until dark golden brown, stirring every 20 minutes.
  • Let cool completely then toss with raisins.
  • Store in an airtight container or ziploc bag.  Can freeze if would like to save for longer!
