Apple & Mustard Vinaigrette
3TBS Apple juice
2tsp Apple cider vinegar
1TBS Wholegrain mustard
¼ cup Olive Oil
Salt & Pepper to taste

2 JAZZ™ apples cut into thin slices or wedges (keep skin on)
2 Spring Onions chopped
3 large handfuls Wild Rocket Leaves
1/3 cup Pecan nuts roughly chopped
¼ cup Dried Cranberries
¼ cup Feta cheese crumbled


  1. To make the vinaigrette, whisk all the ingredients together and season to taste
  2. To make the salad, arrange the apple slices or wedges with the rest of the salad ingredients on a large platter
  3. Drizzle the vinaigrette over the salad and serve immediately.
