Apple & Mustard Vinaigrette
3TBS Apple juice
2tsp Apple cider vinegar
1TBS Wholegrain mustard
¼ cup Olive Oil
Salt & Pepper to taste
Salad
2 JAZZ™ apples cut into thin slices or wedges (keep skin on)
2 Spring Onions chopped
3 large handfuls Wild Rocket Leaves
1/3 cup Pecan nuts roughly chopped
¼ cup Dried Cranberries
¼ cup Feta cheese crumbled
Directions
- To make the vinaigrette, whisk all the ingredients together and season to taste
- To make the salad, arrange the apple slices or wedges with the rest of the salad ingredients on a large platter
- Drizzle the vinaigrette over the salad and serve immediately.
