Serves 8-10
Jazz™ apple & radish pickle
30 ml (2 tbsp) apple cider vinegar
30 ml (2 tbsp) water
2,5 ml (½ tsp) mustard seeds
5 ml (1 tsp) honey
3 radishes, thinly sliced
¼ JAZZ™ apple in the skin, thinly sliced
salt and pepper to taste
Sandwiches
1 small rustic baguette, cut into thick diagonal slices
1 JAZZ™ apple in the skin, halved and cut into thin slices
200 ml finely grated mature white cheddar cheese
microgreens or rocket for garnish
- Pickle: Mix the apple cider vinegar, water, mustard seeds, and honey until well combined. Add the radishes and apple slices and season to taste. Set aside.
- Sandwiches: Preheat the oven to 220 °C and turn on the grill. Line a baking tray with baking paper.
- Toast bread slices in a toaster until golden brown. Place on a baking tray. Top each toastie with 2-3 thin slices of JAZZ™ apple and sprinkle with cheese.
- Grill until the cheese has melted. Garnish with microgreens or rocket and serve with the pickle.
