WHAT YOU NEED

  • 2 JAZZ™ Apples
  • ½ cup instant oats
  • ¾ cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ cup granulated sugar
  • 1 egg
  • 2 tablespoons melted butter
  • ¼ cup milk or plant-based milk
  • 1 teaspoon vanilla extract
  • ½ teaspoon mixed spices
  • Greek yogurt & maple syrup to serve.

HOW TO MAKE IT

  1. Grate the apples (including the skin).
  2. In the blender, combine the grated apples, oats, flour, baking powder, baking soda, sugar, egg, melted butter, milk, vanilla, and spices.
  3. Pulse the mixture a few times until fluffy and bubbly.
  4. Heat a little butter/oil in a non-stick skillet.
  5. Add about ¼ cup of mixture for each pancake. Cook 2 to 3 at a time.
  6. Cook 2-3 minutes each side until golden and puffed up.
  7. Serve stacked with a dollop of yogurt and drizzle with maple syrup.
