Our recipe of the month is a beauty as not only does it taste sublime but it’s also cooked in just one dish meaning there’s less to wash up after. Pork and apple is a classic combination too and this dish certainly doesn’t disappoint with its flavours. Perfect for an easy but tasty midweek meal. Give it a try!
Ingredients
400g of pork tenderloin
3 tbsp of olive oil
Salt and pepper to season
4 tbsp of brown sugar
3 tbsp of Dijon mustard
1 tbsp of minced garlic
2 tbsp of apple juice
2 JAZZ™ Apples, sliced into wedges
Method
Mix together the brown sugar, Dijon mustard, minced garlic and apple juice and rub all over the pork tenderloin.
Season with salt and pepper and leave aside for ten minutes.
Heat a skillet or frying pan over a medium heat before adding the olive oil.
Place pork in the pan and turn every 2-3 minutes to ensure an even cooking.
After ten minutes add the JAZZ™ Apples wedges to the pan and cook for a further five minutes.
Take the pan of the heat and place in a pre-heated oven at 190°C/Fan 170°C Gas for 5 minutes until the apples are soft.
Remove from the oven and leave to rest for five minutes.
Slice and serve with roasted potatoes or mash and your choice of vegetables.
