Our recipe of the month is obviously taken from our recent book with ambassador Jazmin Sawyers and is for the ultimate salad for the summer as the weather warms up. This updated JAZZ™ apple Waldorf Salad is light, fresh and tasty, and takes less than 10 mins to prep so is ideal for when you have a busy schedule like Jazmin!

JAZZ™ Apple Waldorf Salad

Makes – Enough for 2 people as a main course, or 4 people as a side

Prep time: 10 minutes

Ingredients

2 JAZZ Apples, roughly chopped

50g toasted walnuts, roughly chopped

1 lemon, juiced

100g mayonnaise

2 tbsp Greek yoghurt

½ tbsp Dijon mustard

150g red grapes, halved

2 celery sticks, finely sliced

1 little gem lettuce, leaves separated and torn

Instructions

Combine the mayonnaise, yogurt, mustard and lemon juice in a large bowl and season with salt and pepper. Mix to combine.

Add the JAZZ Apples, grapes and celery to the bowl with the dressing and toss well to ensure everything is coated. Arrange the lettuce leaves on a serving platter and spoon over the salad and any remaining dressing from the bowl.

Scatter over the toasted walnuts before serving.
