We love to show you how versatile JAZZ™ Apples are in cooking so here’s a soup-er recipe that’s simple to make but still packed full of flavour! It’s not just dessert dishes that apples can be used in as this JAZZ™ Apple & Sweet Potato Soup shows. It can be made in less 30 minutes and is delicious with crusty bread on a spring day. We highly recommend you give it a try!
2 large sweet potatoes– large diced
2 JAZZ™ Apples – peeled and large diced
1 onion, large diced
4 cloves garlic – sliced
A knob of butter
2 cups vegetable stock
2 tsp pumpkin pie spice (ground cinnamon, nutmeg, cloves, star anise, ginger)
Sea salt to taste
In a large pot, melt butter and then saute onions until tender (about 2 minutes), stirring frequently.
Add sliced garlic and saute for 30 seconds more.
Add the JAZZ™ Apples, sweet potato, vegetable stock and pumpkin pie spice and simmer for 20 minutes or until sweet potato and apples are tender.
Blend on high in a blender until super smooth. Season with salt to taste and then blend again.
While very hot, strain through a fine strainer to give an extra smooth consistency and to remove any remaining chunks (you may need to help press it through the strainer with a spoon or rubber spatula).
Serve warm with some crusty bread.
