The weather is beginning to warm up across the UK and with summer in sight it’s the ideal time to get creative with your salad selection. This delicious JAZZ™ Apple Summer Salad is packed full of flavour and perfect as a quick and easy lunch!

Ingredients (Serves 1-2)
200g cooked Puy lentils
2 JAZZ™ Apples (one and half diced into small cubes, the remaining half and the core juiced for the dressing)
50g Pomegranate seeds
2 spring onions (thinly sliced discs)
A handful of fresh mint and fresh parsley 1 garlic clove (minced)
For the dressing
30ml olive oil
20ml apple cider vinegar
30ml JAZZ™ apple juice
Salt & pepper
1 tsp sugar

Method

  • Mix the dressing ingredients together and set aside.
  • Put the remaining ingredients in a bowl and mix well before dressing.
