We love a crisp, tangy-sweet JAZZ™ on its own as a refreshing snack but the distinctive flavour and texture mean they work fantastically in a host of recipes too such as these Curried Cauliflower & JAZZ™ Apple Mini Tacos. A perfect vegan dish for Veganuary that’s simple to prepare but packed full of flavour. We recommend giving this recipe a try in January!

Makes – 16 portions

Recipe cost: £8 (approx. 50p per portion)

Ingredients:

2 JAZZ™ apples (cored, skin on, diced into small cubes)

1 cauliflower (broken down into smallish florets)

1 tbsp curry powder

1 tbsp coconut oil

Soft mini tacos

Salt/pepper

Coriander and fresh chillies to serve

Instructions:

  1. Preheat oven to 180C.
  2. Break the cauliflower up into small florets, place in a bowl.
  3. Core the JAZZ™ apple and dice into small cubes.
  4. Add the curry powder and then mix so everything is well covered.
  5. Heat the coconut oil on a tray in the oven and when it is hot, add the curried cauliflower and the apple.
  6. Roast for 15-20 mins until nicely coloured.
  7. Once cooked, serve on soft mini tacos and garnish with coriander and fresh chillies
