With spring in full swing and summer just around the corner, it’s definitely the season for some al fresco dining and our recipe of the month for JAZZ™ Apple Marinated Salmon couldn’t be more perfect to celebrate it with. Ideal as a light lunch or main course, it’s full of flavour and so simple to make and a great dish to share with friends and family.

Makes – Enough for 2 people

Prep time: 5 minutes (plus 30 minutes marinating)

Cooking time: 15 minutes

 

Ingredients

60ml JAZZ™ Apple juice

2 salmon fillets

1 tbsp neutral oil

2 tbsp soy sauce

2 tbsp honey

1 tbsp garlic puree

1 lime, juice only

1 tbsp sriracha

1 tbsp sesame seeds

Instructions

Mix the oil, soy sauce, honey, garlic puree, JAZZ™ Apple juice, lime juice and sriracha in a large mixing bowl or zip-lock bag. Add the salmon and mix to combine. Leave to marinate for 30 minutes.

Transfer the salmon fillets to a baking tray, skin side down, and sprinkle over the sesame seeds. Place under the grill for 10 minutes.

While the salmon is under the grill, add the marinade ingredients to a saucepan and cook over high heat to reduce.

After 10 minutes, spoon some of the reduced marinade over the salmon then return to the grill for another 3-5 minutes until completely cooked.

Serve with salad.
