2 large yams (I used a garnet yam), large diced

2 JAZZ™ apples, peeled and large diced

1 onion, large diced

4 cloves garlic, sliced

4 T butter

4 cups vegetable stock

2 tsp pumpkin pie spice (ground cinnamon, nutmeg, cloves, star anise, ginger)

Kosher salt to taste


In a large pot, melt butter and then saute onions until tender (about 2 minutes), stirring frequently

Add sliced garlic and saute for 30 seconds more

Add apples, yams, vegetable stock and pumpkin pie spice.  Simmer for 20 minutes or until yams and apples are tender.

Blend on high in a blender until super smooth. Season with salt to taste and then blend again.  While very hot, strain through a fine mesh strainer to give it an extra smooth consistency and to remove any remaining chunks (you may need to help press it through the strainer with a spoon or rubber spatula).

Serve warm.
