150 g (5 oz) of Greek yoghurt, 10% fat
1 Tbsp mayonnaise
1 small red onion, peeled and chopped
1 JAZZTM apple, diced
2 Gherkins or 6 cornichons, sliced
2 Tbsp pickle juice
Salt & pepper
1 pinch of sugar
½ bunch of chives, chopped
2 slices of traditional German Bauernbrot (a hearty rye bread)
A few lettuce leaves
4 Matjes fillets (soused herring, Dutch and North German specialty)
Optional: add extra apples, pickles, and chives to garnish

Mix yoghurt with mayonnaise, onions, apple, pickles, pickle juice, salt, pepper, sugar, and chopped chives.

Cover the slices of bread with lettuce leaves and put two Matjes fillets on each slice.
Then cover with the apple and onion sauce.

Garnish with extra apple, pickle, and chives to taste.
