This month’s recipe was sent in by JAZZ™ fan Kathleen from Cartmel and we think it’s perfect as winter draws closer. The combination of pumpkin and JAZZ™ work wonderfully together and it’s the ideal recipe to make to warm you up on a cosy weekend at home. 1 large Parsnip (peeled and diced)
1 Onion (finely diced)
1 JAZZ™ Apple (peeled, cored and diced)
1 tsp Ground Coriander
1 tsp Ground Cumin
1 tsp Turmeric
1 pint of Vegetable Stock
Salt and Pepper to season
In a saucepan fry the onion gently for a few minutes.
Add the parsnip, JAZZ™ Apple and dry spices and fry for a further 5 minutes.
Add the vegetable stock and leave to simmer over a medium heat for 25-30mins
Season to taste and serve with warm toasted bread.
