4 JAZZ™ Apples – peeled, cored and cut into small chunks

120ml sunflower oil

60ml Milk

2 eggs

1 teaspoon vanilla extract

250g caster sugar

250g self-raising flour

2 tsp ground cinnamon

Good pinch of allspice

½ tsp chia seeds


Pre-heat the oven to 180c or 170c for a fan oven.

In a large mixing bowl mix the apples with the oil, milk, eggs, vanilla extract and sugar together until nicely combined. Add the flour, cinnamon, allspice and chia seeds and thoroughly mix again.

Take a standard loaf tin and line it with baking parchment/greaseproof paper and pour in the mixture.

Place in the middle of the pre-heated oven and bake for about 1 hour or until the centre of the loaf is cooked; you can test this by pushing a skewer through the loaf. If it comes out clean the loaf is cooked. Leave to cool slightly and lift from tin using the baking paper.
